Faketh Lahum Ghanum (Roast Leg of Lamb)

Ingredients: 6 Servings

5 lb Leg of lamb
1/4 t  Marjoram
1 t  Salt
1/4 t  Sage
2 ea Garlic cloves - minced
1/4 t  Ginger
1/4 t  Pepper, black
1/4 t  Thyme
1/4 ea Bay leaf - crushed
1 T  Olive oil

Preparation:

Wipe lamb with damp cloth.
Cut small gashes 1/4" long on top surface of lamb.
Combine salt, garlic, pepper, bay leaf, marjoram, sage, ginger and thyme - mix well.
Rub mixture well into meat so that all gashes are completely filled.
Give roast a final coating with oil. Sear in 500F oven for 15 minutes.
Reduce heat to 350F and roast about 1-1/2 hours.
