But Ma’a Marqeh (Duck with Wine Sauce)

Ingredients: 4 Servings

1 ea Duck
1 c  Water
2 T  Butter
1 ds Cinnamon
1 ea Onion - chopped
Salt
1 c  Wine, red
Pepper, black
1 c  Tomato sauce

Preparation:

Wash and clean duck - cut into serving pieces.
Melt butter in saucepan - saute onion until soft - add duck and brown on all sides.
Add wine, cover and cook for 20 minutes.
Add tomato sauce diluted with 1 cup water, cinnamon, salt and pepper.
Cover and simmer until duck is cooked, about 30 minutes.
Sauce may be thickened with a little flour if desired.
